Thierry Germain farms this Loire Cabernet Franc biodynamically on clay and limestone, and Outre Terre is the small-production cuvée that goes into amphora before finishing in barrel. The egg-shaped vessel is right there in the artwork on the label. The 2021 opens savory, cedar bark and juniper, then mellows into velvety fruit with a twist of bitter orange on the finish. Vines planted in 1995, fermented in clay, and not a shred of makeup on it.

Tasting Notes

Thierry Germain bottles two amphora releases, the labels of which artistically allude to the ancient, egg-shaped vessel. Outre Terre is a tiny production of Cabernet Franc fermented in amphora and aged in barrel. This vintage’s savory notes of cedar bark and juniper mellow into velvety fruit with a touch of bitter orange. Earthy dishes such as butter beans and wild mushrooms with plenty of garlic and herbs will coax out the wine’s especially lush qualities.
