Pierre-Olivier Bonhomme farms organically in the Loire, and this Gamay-dominant blend, the makeup shifts with the vintage, comes off clay and limestone from vines averaging thirty years. Whole-cluster, fifteen days on skins, fermented in tronconic wooden vats and six months in barrel; sulfur only if the wine asks for it, and often not at all. Structure from the stems, lift from the limestone, and nothing in the way.

Winemaker Notes

Whole-cluster, 15 day maceration. Fermented in tronconic wooden vats and aged six months in barrels. Pierre-O tries to bottle this with without the addition of S02 (2018, 2019, 2020) but is not averse to adding 15 mg per liter before bottling if deemed necessary.
