Jean-Paul Hébrart has been running this Vallée de la Marne estate since 1997, though the family has been bottling under the Marc Hébrart name since 1964. Pinot Noir from Mareuil-sur-Aÿ and Louvois Grand Cru, Chardonnay off 50-plus-year-old vines in the home village. All stainless, full malo, 36 months on the lees, and a restrained 5.5g/L dosage: this is Pinot-driven Champagne with real breadth through the mid-palate and a chalky finish that doesn't need sugar to make its point. Grower Champagne where the vineyards, not the cellar, do the talking.

Jean-Paul Hébrart took over Marc Hébrart from his father in 1997. His father had been producing estate bottled wines since 1964 and joined the Club Trésors in 1985 Jean-Paul has slowly developed the estate in the last 20 years to one of the very finest grower estates in the Marne.
