Jean-Paul Hébrart took over from his father in 1997, but the family has been making Champagne in the Vallée de la Marne under this name since 1964. The Pinot Noir here comes from Mareuil-sur-Aÿ and Louvois, the Chardonnay off 50-plus-year-old vines. All stainless steel, full malo, 36 months on the lees, and a restrained 5.5 g/L dosage: no oak dressing it up, just fine texture and chalky drive through the mid-palate. This is grower Champagne with a real address behind it.
