Jean-Paul Hébrart farms fourteen hectares across Mareuil-sur-Aÿ, Avenay Val d'Or and Bisseuil. All premier cru, all worked organically, with Pinot Noir vines over fifty years old carrying the weight here at 70% of the blend. Stainless steel fermentation, full malo and thirty months on the lees give it a chalky, orchard-fruit mid-palate with real breadth rather than sharp edges, and at 6g/L the dosage isn't papering over anything. Grower Champagne from a family that's been doing this since 1964. The structure comes from the vineyards, not the sugar.

Jean-Paul Hébrart took over Marc Hébrart from his father in 1997. His father had been producing estate bottled wines since 1964 and joined the Club Trésors in 1985 Jean-Paul has slowly developed the estate in the last 20 years to one of the very finest grower estates in the Marne.
