Jean-Paul Hébrart took over from his father in 1997, and the fruit here comes from 50-plus-year-old vines across four premier crus in the Vallée de la Marne. Pinot Noir from Mareuil-sur-Aÿ and Avenay Val d'Or, Chardonnay from Mareuil and Bisseuil. Stainless steel only, full malo, thirty months on the lees and a restrained 6g/L dosage: this is Champagne built on orchard fruit, chalky cut and a creamy mid-palate rather than sugar. Grower Champagne with real address behind it. Not a brand, a place.
