Mon Coeur is Jean-Louis Chave's négociant project, and the name, "my heart", tells you where his affections lie: Grenache and Syrah pulled from Vinsobres, Rasteau, and Cairanne, off vines running up to 60 years old. Fermented parcel by parcel and raised in large casks, so the fruit stays bright and unvarnished rather than sanded down by oak. This is the guy who spent decades rebuilding abandoned terraces in Saint-Joseph, making a wine you can drink on a Tuesday.
