Picpoul de Pinet sits on clay-limestone at the edge of the Étang de Thau, close enough that the vines all but stare at the sea. And Hecht & Bannier's organically farmed Piquepoul carries that address in the glass. Late-ripening by nature, the grape holds its acidity through the Mediterranean heat, arriving bright and vivid with a saline wave running clean through the mid-palate.
