Envinate Migan Chingao Tinto 2021

Chingao is a single section of a parcel that Envinate considers to be very special. 100% Lístan Negro from the La Habanera parcel of 100+ year-old vines at 620m above sea level. This is a more clay rich spot producing wine with a bit more concentration. The grapes fermented and macerated on the skins and stems in concrete tank for 15 days without temperature control. Then, the wine was pressed to a concrete tank to complete spontaneous malolactic fermentation and rest. Bottled directly from the concrete tank without fining, filtering, or addition of sulfur.

Wines from this area have an intense volcanic expression and this is particularly true of this cuveé. Saline and smoky with very concentrated volcanic notes. Strawberry fruit is balanced with fine tannins and refreshing acidity.
