There are a handful of Burgundy domaines so bound up with their village that you can't say one name without the other. Bize and Savigny-lès-Beaune is one of those pairings. This white is drawn from three parcels, and while the élevage at Bize follows a house style with only the length shifting by parcel and vintage, nothing here is done on autopilot; the vinification bends to what the fruit asks for. One of the most under-appreciated great domaines in Burgundy, and this is why.
