This one exists because Elena Maza wanted something lighter than wine before dinner, and the Catena Institute took the assignment seriously. The family's first non-alcoholic bottling, named in her honor. Pale salmon in the glass, with roses, pear, and fresh citrus up front and a subtle herbal edge underneath; melon and sweet lemon carry through to an elegant floral finish. Proof that an aperitif doesn't need alcohol to have something to say.
