Saumur-Champigny built on limestone-rich clays, and Domaine des Closiers reads that site with a deliberately light hand: hand-harvested fruit, spontaneous fermentation on indigenous yeasts, a cold soak before things get going, and macerations that can run past a month with no punchdowns. Just a brief pumpover every day or two. That's a long time on skins for so little force, and it shows in the shape of the wine: Cabernet Franc with real mid-palate presence and fine-grained tannin rather than muscle, minerality running underneath. Patience instead of pressure. You can taste the difference.

Winemaker Notes

Viticulture: All grapes are harvested by hand and all fermentations start spontaneously with indigenous yeasts. Cabernet Franc grapes are allowed a cold maceration period before fermentations commence, and total macerations can exceed a month. Extractions are very gentle, with no punchdown and only a short pumpover every 1-2 days. After a fermentation/maceration, the wine is aged in stainless tanks for an additional 8-10 months before bottling. Aging: Wines are aged in tunnels dug into the limestone hillside by previous generations of vignerons. No products are used except a minimal level of SO2 prior to bottling. Production: 1,300 cases annually. Vineyard: Assembled from vines throughout the estate’s holdings.
