Dehours farms practicing organic in Mareuil-le-Port and Troissy, and this cuvée leans hard on Meunier, 80% of the blend, with a splash of it kept still, rounded out by Chardonnay. The 2020 base gets depth from a perpetual reserve stretching back to 1998, all stainless steel, full malo, 22 months on the lees. Zero dosage, so there's nowhere to hide: this is Champagne with the sugar turned off and the chalk turned up.
