Jean-Claude Mas has been chasing authentic Languedoc expression since 2000, and this organically farmed blend of Chardonnay, Chenin Blanc, Pinot Noir and Mauzac comes off clay and limestone at 820 to 920 feet. Enough elevation to keep the acidity honest. The nose is genuinely refined, honey and acacia and crystallized lemon, and the mid-palate follows with citrus fruit and balance rather than bulk. It's an aperitif that doesn't quit when the food arrives.
