Clos du Tue-Boeuf farms certified organic on Loire clay and flint, and these forty-year-old vines, two-thirds Côt, one-third Gamay, get the light touch: whole-cluster semi-carbonic fermentation, then ten to twelve months in used Burgundy barrels and 400-liter demi-muids. Bottled unfiltered with minimal or no sulfur, so what lands on the mid-palate is fruit and flint rather than oak, with tannin that stays fine-grained and out of the way. This is what the Loire tastes like when nobody's dressing it up.
