Christophe Mignon farms Meunier on clay-limestone over Tuffe with a fanaticism that borders on the devotional. Moon cycles, phytotherapy, geobiology, soil turned by hand four times a year, one person to a single hectare, which in Champagne is nearly unheard of. Parcels are vinified separately in enameled steel, and the result is a clean, delicate nose and a creamy but straight mid-palate carrying roasted coconut, vanilla, and spice. Meunier as a soloist, not a supporting player.

Winemaker Notes

Viticulture: Blend of biodynamics, according the moon cycles, phytotherapy, homeopathy and geobiology. Soil worked manually (4 passes/yr). One person cares for one hectare-extremely high ratio by Champagne standards. All fruit is hand-harvested. Vinification: Parcel vinified separately in enamelled steel tanks during 8 months, then 1 year of ageing in foudre before bottling, Without malolactic fermentation. Working dates chosen by lunar calendar, only during fruit day. Single harvest 2018. Aging: 48+ months sur lattes. Production: 1,680 bottles. Vineyard: Single vineyard in La Chapelle Monthodon called "Les Châtais", planted in 1998,. Orientation: south/south-west.

Tasting Notes

Very clean and delicate nose, fruity with light oaky touch. Creamy texture, and straight mouth, with roasted coconut flavors, vanilla, and spices
