Cahors is Malbec's home address, and Combel la Serre farms it organically on clay and limestone with thirty-year-old vines that know exactly what they're doing. Half destemmed, half whole-cluster, a long maceration, then cement. No oak anywhere in the process, so the fruit arrives dark and unvarnished with limestone cutting a line straight down the mid-palate. Structured, mineral, honest: nobody's hiding it under vanilla.

Winemaker Notes

50% destemmed, 50% whole-cluster. 12-20 day maceration. Fermented and aged in cement tanks. S02 additions are up to 1.5 grams per hectoliter on the harvested grapes and 1.5 grams after malolactic fermentation.
