Fresne-Ducret farms six hectares of 1er Cru vineyards split across 25 parcels, nearly all in Villedommange, a village that, per Champagne authority Richard Juhlin, holds some of the best sites in the northern Montagne. Their Ratafia Champenois is naturally sweet, built from Pinot Noir must fortified with alcohol, exactly the way Pierre's grandfather Jean made it. Jean took it cold as an aperitif, or mixed one part Ratafia to two parts Champagne in a cocktail he called the "Rachamp". Proof that the best house recipes never needed improving.
