A Loire sparkler built the way the Loire does it best: Chenin Blanc leading at 65%, with Chardonnay for florals and a splash of Cabernet Franc for fruit. Pale yellow, tiny persistent bubbles, rounded and delicate on entry but with a nervy line running underneath. Pear and peach that linger well past the swallow. Nonvintage bubbles with this much detail are the reason people stop chasing labels.
