Viticulture: Blend of biodynamics, according the moon cycles, phytotherapy, homeopathy and geobiology. Soil worked manually (4 passes/yr). One person cares for one hectare-extremely high ratio by Champagne standards. All fruit is hand-harvested. Vinification: Rosé d’Assemblage (10% still red Meunier). 50% reserve wines from harvest 2020 + 50% of wine from harvest 2021, Vinified in enamelled tanks during 8 months before bottling, Without malolactic fermentation. Working dates chosen by lunar calendar, only during fruit day. Aging: 30 months sur lattes. Production: 2,880 bottles. Vineyard: Parcels located in the communes of Festigny and Le Breuil. 60 cm of clay limestone topsoil with traces of chalk and layers of tuffe below. Soil worked manually (4-5 passes/yr); ratio of 1 vineyard worker per hectare; hand harvested. Orientation: South/Southwest.
