Thursday Tasting — Chablis | April 9

Six wines. One grape. One region. And about 155 million years of fossilized seafloor between you and the glass.

This Thursday we're pouring Chablis — the northernmost outpost of white Burgundy, where 100% Chardonnay grows in ancient Kimmeridgian limestone packed with oyster shells and proves it doesn't need oak, warmth, or California sunshine to be extraordinary. The flight moves from Petit Chablis on the plateau all the way through aged Premier Cru from the right bank of the Serein River, covering every classification level along the way. No reservation needed. Just show up.
