Chenin from Mendoza is already a plot twist, and Escala Humana works a single Uco Valley vineyard in Los Sauces planted in 1980. Clay loam over sand, hand-harvested, nothing rushed. Indigenous yeast, a quick direct press into steel, then eight months in concrete eggs, which keeps the fruit lifted and the mid-palate round without a splinter of oak in the way. Forty-plus-year-old vines and not a stick of new wood: this is what Chenin tastes like when nobody's dressing it up.
