They call it "Ad Fines," and it is the magic that culminates when Michel Rocher, Yves Cuilleron, and Baptiste Olivier turn soil together!
The Ad Fines property in total is 2.8 hectares, broken into three plots, on the Heyrauds hillside in Menerbes. Winemaking is hands-off, with native yeast fermentation, long macerations, and elevage in used burgundy barrels. One of our favorite things about this property is the use of the varietal Serine - The beloved and hard-to-find predecessor of Syrah that is much lessuniform and extremely complex.
