Casablanca Valley runs cool enough that Sauvignon Blanc keeps its nerve here, and Prisma pulls from two sites, Belén and El Principal, including some of the valley's original 1982 plantings, sandy and clay soils over granite. Hand harvested, fermented entirely in stainless steel, which is to say nothing gets between you and the fruit: citrus, a green edge, a saline snap through the mid-palate. Forty-plus years of vine memory and not a splinter of oak in sight.
