Winemaker Notes

Fermentation and aging can occur in different vessels each vintage depending on the global quantities. For this wine, 228l barrels and 2500l foudres are usually used along with enamel lined tanks in generous vintages. Long alcoholic and malolactic fermentation in old oak barrels. Aged 11 months on the lees without racking or cold stabilization. Usually bottled unfiltered.
