Rémi Georgeton came home to the family's 3.5 hectares in 2006, and when the domaine earned organic and biodynamic certification in 2021 he marked the occasion by bottling under his own name. This cuvée draws on all four of his villages, three 1er Cru and one Grand Cru. It's 40% Pinot Noir, 30% Meunier, 30% Chardonnay, all from 2020, with a third fermented and aged in foudre for width across the mid-palate. At 3 grams of dosage there's nowhere to hide: this is Champagne built on fruit and chalk, not sugar.
