Winemaker Notes

Viticulture: Organically farmed, all work in tandem with Mother Nature's rhythms. Vinification: Grapes are picked by hand when fully ripe, and traditionally pressed. Spontaneous fermentation in 228L barrels with regular stirring of the lees. no malolactic fermentation. Aged sur lie in barrel for 6 months, then bottled without filtration. Aging: 36 months sur lattes. Production: 4,579 bottles. Vineyard: Two very chalky plots in Chavot planted between 1953-1978. Very little topsoil before you hit chalk. Worked with a horse. Orientation: west exposition.

The 2021 Extra Brut Blanc de Blancs Les Grandes Crayères 1er Cru is stellar. Bright, punchy and chiseled, the Les Grandes Crayères screams with character. Lemon oil, chalk, mint, dried herbs, white pepper and marzipan sizzle in the glass. What a gorgeous and expressive Champagne this is. About the Producer

Aurélien Laherte is part of a dynamic generation of young vignerons making waves in Champagne and producing a fine array of terroir-driven wines using a natural approach to viticulture and winemaking. Along with his high school friend Raphael Bereche – another star in the region – Aurélien founded the “Terres et Vins” collective of producers back in 2009. This group taps some of Champagne’s more progressive and like-minded producers, including Agrapart, Marie-Courtin, Vincent Laval, Benoit Lahaye, among others.
