Domaine Alice et Olivier de Moor Bourgogne Chitry 2022

The de Moors farm certified organic on the Kimmeridgian limestone and clay that gives this corner of Burgundy its salt. Vines planted in 1995 and 1998, old enough to know what they're doing. Chardonnay fermented long and slow in old barrels, malolactic taken to completion, then eleven months on the lees without racking, which is where the texture comes from: a broad, saline mid-palate wrapped around real mineral cut. No new oak anywhere near it. Nobody's hiding this under vanilla.
