Aiming for elegance, restraint and the ability to age, acid is bright and there’s generosity of flavour. Typically it shows white flowers, citrus, and nectarine notes. Superb alongside grilled Pacific Sea Bass with a caper butter sauce.

“The 2023 M3 Chardonnay leads with pressed flowers, curry leaf and iodine/oyster shell characters through the finish. The acidity is piercing—fearsome even—while the sulfides through the finish are angular and hard.
