Thursday Tasting — White Burgundy | August 27
Four wines. One grape. Four addresses.
Everything on the table tonight is Chardonnay, and nothing tastes the same, because in Burgundy the address does the talking. We start seventy miles north of everywhere else, in Chablis, where Droin's premier cru Vaillons grows in fossilized oyster shell and stays almost entirely out of oak: white flowers, lemon pith, and a chalky finish that makes your mouth water. Then it's down to the Côte de Beaune for the two villages that share the Montrachet hill: Fichet's Chassagne, the youngest and friendliest wine of the night, and Alain Chavy's Puligny, off vines past their fiftieth birthday, stony and restrained the way only Puligny is. The last glass climbs 400 meters above the valley floor to Blagny, where Louis Latour owns every row of Château de Blagny and this bottle has seven years of age on it — soft, salty, and proof of what patience buys. And two bonus wines pour by the ounce alongside the flight: a Meursault lieu-dit to complete the set of famous villages, and a premier cru Chassagne if you want to know what that step up actually tastes like.
