Individual blocks were hand-harvested and whole-cluster pressed on a gentle yet rapid press cycle to avoid excessive extraction from the skins. The result yielded a juice pale salmon in color with delicate flavors and aromas. Fermentation was carried out at low temperatures in stainless steel tanks and continued until dry.
